What do you use as far as frosting goes. I'm pretty sure ganache and smbc doesn't hold up to well for those outdoor parties. What do you use for the customers who want to display the cakes on a sweets table outdoors for the whole party??

The meringue buttercream frosting recipe is one that can stand up to warm climates but remain smooth like a classic buttercream frosting.

This recipe combines a creme anglaise and Italian meringue with the butter to make a stable frosting that is also great for piping decorations on a cake.
