Hi I live in Southern California and the weather can get pretty hot. I was wondering how long can a fondant cake sit outside, if chilled and boxed in the refrigerator, before it starts to melt away?

It certainly depends on just how hot it is.
Do a test yourself - wrap a small piece of cake w/fondant and set it outside - maybe do two - one in the shade and one in direct sun.
