I just can't seem to get smooth edges. Even with a more medium-stiff bc, it still gets raggedy. I'd love to have smooth edges - anyone know the trick??

Make sure your tip is opened enough.

If your icing is too dry--add shortening.

HTH.

Hmmmm.... I never thought about it being too dry - I typically use the all-crisco wilton recipe for flowers. I will have to compare that to some others can see if they work differently.

And thanks for mentioning the tip - maybe I can try to open up that one end just a touch.

Thanks!

I totally agree with unlimited. Open the tip a bit, at the smaller end, it worked for me. I now get perfect roses every time. Try that first, it is probably not your icing.

Good Luck hope it helps.

Ok, here's a neat trick an older decorator told us about. Stripe your icing bag with both soft and medium to firm icing. The soft should always be pointed upwards while you're using the bag. This way the uppermost edges of your rose petals will be soft and flowing while the base will be sturdy and ridged.
