Cake With Fresh Fruit Filling, How Far In Advance?

Hi Im gonna be make in cake for next weekend and they are asking for an 8" white with fresh strawberries and buttercream as the filling and a 10" marble with 1/2 banana and 1/2 peaches with butterecream. I usually build my cakes on thurs. and deliver on fri. for occassions on sat. Can I still keep my same timeline if the cake is in the fridge til sat?

You should probably fill the cakes either the night before or the day of the event, and then keep it in the fridge till delivery. Fresh fruit will start losing its liquid just a little while after it's cut, so you can't leave it around for too long. You also need to something to keep the bananas from turning dark after they're sliced - I usually bathe them in lemon juice, but only if that goes with the other flavors.

Ok thanks. I will have to try the lemon juice with the bananas. Im a little hesitant using bananas for fear they are going to turn brown
