Refrigeration Cookie Dough??

I am making cookies on Thursday but would like to make all the dough on Wednesday. Can I mix up chocolate chip, peanut butter kiss and monster cookies and put them in frig overnight?? What I was going to do is just put saran wrap over the top of the bowl?? Will that be ok??

Not that i have ever made Peanut Butter cookies - but i place all my cookie dough in the Fridg for at least a couple of hours before rolling it out.
I don't leave it in the Bowl per sae - i roll it up in a couple of layers of glad wrap (saran wrap).... never had a problem - haven't found that the consistancey changes at all. thumbs_up.gif

For drop cookies, I scoop them before refrigerating. Place the balls of dough on a cookie sheet (stack if necessary) and cover tightly.

So mimifix do you saran wrap the cookie sheet?? Also does the cookies stick together if you stack them already in balls???

If the dough is especially sticky, I use a sheet of plastic wrap between the layers. So I fill the tray with balls of dough placed close together, put a piece of plastic wrap over that layer, and keep adding dough balls. When done scooping, I wrap the entire sheet with plastic film or place in a plastic bag, and refrigerate. When I'm ready to bake, the dough is placed on the cookie sheets and baked as usual. I don't wait for them to get to room temp. They don't need much extra oven time, barely a minute more than usual.
