Hello -
I never really make 13 x 9 cakes, but I need one today. Should I bake at 350 or 325? Do I need a flower nail or baking strips? I use nails with 10" squares and 10" rounds but nothing smaller.
Thanks for your help!
Katie
Yes & Yes, I always bake my cakes at 325 degrees and if you use the flower nail it will bake more even. Remember it will take longer to bake @ 325.
I bake my 9x13 at 325 and use a flower nail.
@MelaMang75 - the flower nail goes upside down in the middle of the pan before you pour the cake batter in. It helps conduct heat in the middle for more even baking.
Bake the cake using a METAL flower nail. Plastic will melt and you'll have a mess Prepare it as you did the pan with oil & flour or spray or goop, etc. Place it UPSIDE DOWN in the pan (point up) in the middle of the pan. Use 2-3 for larger pans. Pour in batter and bake as usual. Remove nail from baked cake layer and proceed as usual.
I tried baking without the nail and my cake sunk a little in the middle. It's ok because I needed cake balls today as well. My second attempt is in the oven with the nail in place. I shouldn't have been so lazy with the first one ... I just thought I would take the risk!
Thanks for the input!

I just baked 3 layers of 12x18 Used 2 flower nails and strips. Baked at 325 and they came perfect.
HELP!! My second attempt sunk as well. Maybe it is the recipe. It is a strawberry cake from the Cake Doctor. I have made it a million times, but never as a 13 x 9. The recipe calls for 4 eggs, should I try 3?
Thanks!
K
