I have read conflicting stories on the fridge issue. I am a home baker (under cottage law) so my fridge does not have humidity control. But I see some do refridgerate and others swear it dries the cake out. I would love to Bake Thursday, ice friday morning and decorate Friday night for a cake due saturday, so I would need to refrigerate cake on Thursday and I cannot use perishables so after it is iced Friday it would sit on counter till decor and delivery. Will this dry my cake out?

If it's a tiered cake, it can't settle while chilled in the refrigerator.

On the counter is fine, after it is iced. It won't dry out... the icing seals it. It will get more moist as the icing has a chance to meld with the cake.
