Hi,
I'm about to take the Wilton Course 2 in a few weeks, and my question is about working with royal icing.

When I pipe with buttercream, I have to cool the piping bags or during class, I just dumped out the warm, runny BC and replaced it with a new batch of BC. My hands run hot, I live in a humid place, and I was wondering if I may have a similar problem while piping out Royal Icing....

No. There is no fat in royal icing to melt.

No, it doesn't melt, but it definitely changes consistency in hot hands. It gets "foamy" and no longer looks crisp & clean when piped.

It's best to have multiple, small bags ready to go. You can put the foamy stuff back in the mixer with some fresh and re-mix. It'll get it back to workable consistency.

Happens to me every time, so I use smaller bags and have no problem.
