Baking A White Cake With No Brown Crust

I was at a bridal show recently and tasted a cake that was delicious , but the thing I was most impressed with is that the layers of the tiers were completely white , no brown crust like when I bake mine . Years ago I also came across a decorator whose wedding cakes were the same . So my question is .. how do they do that .. do they bake then trim off the brown crust or is there a way to bake the cake so that the outside does not brown . Thanks

Trim off the brown crusts. With a little practice, you can shave the sides without losing much cake at all.
