If I have an Italian Meringue Buttercream covered cake how long can I leave it out of the refrigerator for? The room/outside temp is 60 degrees today and 45 degrees tonight. I have no room for this huge cake in my fridge.
From my understand IMBC doesnt need to be in the fridge. I asked about IMBC through a post and from the info I got I left my cupcakes out in a air tight containter for 3days for my family to eat and they were still good 3 days later. Unless your filling needs to be in the fridge I would say you are fine
Scientifically, you have turned your whites into a confection. In any perishable situation, you need to look to your weakest link. In this case, it will be the butter. We all know that butter can stay out for several days as long as it isn't too hot. So think of it and treat it as you would butter.
