How does one go about cutting and serving the giant cupcake? Especially if it has a chocolate shell.

I would assume like any other cake. What's the dimensions?
If your question is mainly about the chocolate shell (it's a hard shell I'm assuming) it might be helpful to dip your knife in hot water, dry it, and then slice. The warm knife will go through the chocolate better. You'll have to do that for every slice.
