Help!! Chocolate Buttercream Is To Bitter

I am trying to make the Wilton's Chocolate Buttercream and it taste bitter or as my 4 year old said "sour." I have never made this recipe before. I was hoping it would be a little bit sweet. I used cocoa instead of the chocolate squares. Does anyone have any ideas on how to make it more sweet?

i use the wilton recipe all the time and have never had a problem. maybe you cocoa is too dark? like one of those special blends.

I agree, it's probably the cocoa. I've used Bourneville cocoa powder before, and it's so rich that it doesn't make very nice tasting buttercream - it comes out too bitter. Try with chocolate squares, or a less strong cocoa.

Does the recipe call for semi-sweet chocolate squares? If so, you're missing some of the sugar when you substitute cocoa.
