Can I crumb coat in chocolate but use vanilla as a final coat?? It's Italian Meringue Buttercream. Thanks!!!

I do it all the time...but I don't use IMBC. If it gets hard in the refrigerator, you will have no problem. I actually have had chocolate buttercream frosted cakes that I've covered with a totally different colored BC for the last couple of layers to get the color I need.
