When You Make Buttercream Roses

I am making my roses tonight for a cake that i'm decorating tomorrow to give to my parent's Saturday for their anniversary...
My question is, after you make your roses do you keep them in the freezer until you are ready to use them? Or do you leave them sitting out at room temperature? If so do you cover them or leave them uncovered??

Room temp, uncovered, so they can air dry. Keep them away from sunlightpink can fade.

I leave mine out and uncovered to get that nice crust so they hold their shape.
However, if you want a softer rose, easier to bite into, you might want to keep them in the freezer until you start decorating the cake. Buttercream doesn't take that long to thaw.
