I am making my first cake, a three-tiered Scooby Doo cake, for my kids' birthday party. We had to postpone the party because they were sick, and now I am wondering what to do with the buttercream. I made it a week ago--vanilla bc and lemon cream cheese bc--but the party isn't until 3/10. It's tightly wrapped in the fridge--will it keep for another week or do I need to start over? I have no extra freezer space. Thanks.

Depending on which recipe you used, it will be fine. If there is enough sugar it will preserve your butter and cream cheese.

If it's not meringue buttercream (the kind that has beaten egg whites in it) you can also freeze it. I keep buttercream in my freezer for a couple of months when I make too much, which is most of the time for some reason. It will be fine either in the fridge or the freezer - just put it where you have the most space.
