How do I thaw a cake I froze that is covered with fondant without it "sweating"?

If it was frozen properly, it will be double-wrapped and preferably in a box. Set it on the counter and don't unwrap it until it has completely thawed. The condensation will be on the wrapping, not on the cake.

Box completed cake. Wrap box in 2 layers saran, 1 layer foil. Freeze. 24 hrs. before delivery/display/serving, place still wrapped box in fridge. A few hours before delivery/display/serving, place still wrapped box on counter to come to room temp. Remove from wrapped box immediately before display/serving.
