Question For The Box Mix Bakers

Hi Everyone!

I am wondering who has baked with the new, reduced size cake mixes? Specifically, have the cakes turned out the same? Do you need to weigh out 18.25 oz? Do you need to add anything to make the cakes (or cupcakes) behave the same as the 18.25 oz mixes? (Hope that's making sense!)

I have used some of the reduced size mixes and just had to use more to get the volume needed to fill the pans- e.g. where I used 2 1/2 mixes before I would use 3 mixes or more. Figure the amount of batter in the new mixes is about 4.5 cups vs. 5.5 cups in the older ones.

Okay. Now what if I'm using the WASC or a mix with an extender? Any difference there or is just a reduced amount of batter?

I mixed up a chocolate WASC with the new size of DH mix. I was able to fill two 8" rounds (2" tall) and they baked up to the full 2 inches. I haven't tasted as of yet to determine if taste is the same.
