i am making a three tier birthday cake and she doesnt want icing in the middle because she finds most cakes to sweet. i was thinking of a bavarian/custard filling. any ideas would be great for a filling that is low on the sweet/sugary level also one that will hold up to stacking. cheers

I have tried uht whipping cream its less sweet and u can flavor it , but the problem the layers absorb ir after sometime , so try to add piping gel to it

Your idea is great and Any thick fruit jam can be used. You can get some that are 'simply fruit' or no sugar added.
