Basil Infused Strawberry Filling. .help!!!

Hi everyone,

I have had a request for a basil infused strawberry filling. Ummm, does anyone have any idea on how to "infuse" basil into a strawberry filling. My usual filling consists of cut up fresh strawberries mixed with Marzetti's strawberry glaze (super easy, but delicious!!!).

Should I cook some fresh basil with a simple syrup and mix it into the filling?

Any help or ideas are appreciated and NEEDED!!! Wedding is this coming saturday so I gotta figure something out soon. LOL

That's exactly what I would do, make a basil simple syrup and use a little bit at a time. Basil is very strong... Only use fresh basil, do not use dried. Make sure you strain after it's done to get your bits out.

Thanks! My only concern with the syrup is that it will make the filling to runny. Do you think it will be ok?

The only other thought I had was to take the gel filling itself and bring it to a boil and steep the basil directly into the filling and then strain out the bits and pieces?

what do you think?

Since you will fresh fruit why don't you just brush your cake in the basil simple syrup?
