I'm in the process of stacking and crumb coating cakes for a 5 tier wedding cake for Saturday. After Crumb coating I usually wrap them and put them back in the freezer until the day before the cake is needed. But this one has a 16" bottom layer that probably won't fit in my freezer after it's crumb coated without touching the sides and messing up the frosting.

So how long can a cake be sitting out crumb coated and covered in fondant before delivery??

TYVM for any help!!

As long as it's in a cool dry place, it should be fine left out. The fondant will seal it so there shouldn't be a problem.
