Does anyone else have trouble with the eggs cracking when you coat peanut butter eggs? I mix the eggs, form them and freeze to make them easier to dip. But sometimes the eggs crack. Any solutions?
I'm not sure what you are talking about when you say eggs, but if it's like cake pops, they crack when the too cold cake pop meets the warm chocolate. Maybe this is the problem.
To avoid cracking, your eggs need to be as warm as possible and your coating needs to be as cool as possible. It's the difference in temperatures that causes the cracking.
How long are you freezing them ? If they are frozen solid and extremely cold they will crack when dipped. leave them sit out for just a couple mins before dipping.
Ive made cake pops and froze them for days before dipping
I just left them sit out for a few mins before dipping.
doing it all in the same day usually use two baking sheets
and rotate between freezer and dipping. because if they are too warm they will fall apart when dipped.
