Hello all,

I am attempting to carve a cake later on tonight.. Would anyone be able to share tips on the best way to do this.. should i fill the cake first and then carve ? ive heard that its best to carve when the cake is semi-frozen. If i do freeze the cake is it ok that the cake will already be filled ? please help icon_sad.gif Thank you all in advance icon_smile.gif

I've just carved a penguin cake and what I did was carved the initial shape first, then filled and touched up the carving. I use a serrated knife, large for getting the shape, small for fine tuning the shape and details. You can freeze your layers but you only want the semi frozen otherwise it will make it really difficult to cut.

After filling, make sure the cake is frozen before carving. If it's taller than 5 inches, you might want to add another board and support dowels mid-way. When doing this cake, I took some of the crumbs and icing I had carved away and smushed them into a paste, then smeared it onto the cake with my hands to create a smooth surface before frosting and covering with fondant.

I don't freeze anything before carving because I want to make sure that the cake is going to stay where I want it to. I figure that if it's frozen then it might act differently when it thaws. I stack everything then carve the shape out of the larger stack of cakes.

This is what I do as well.
