I am confused about Extract and Candy Oil Flavoring's. Can anyone please tell me the difference?
When adding flavor to a cake, do you recommend Extract or Candy Oil flavoring? Example of flavors like amaretto and almond. Please help!!!......

Extracts have alcohol and water and can cause chocolate to seize. When you want to flavor chocolate or candy melts you need to use the oil based candy flavors. You can use oil based flavors in cakes and icings or extracts. But you can not use extracts with chocolate or candy melts.

I use the Lorann oils in cakes and frostings quite a bit. I like the numerous flavors available and the intensity of the flavor.
