I'm planning to put a fully decorated cake covered in Swiss Meringue BC (a ruffle cake) in a tin / plastoc tub then in the freezer.
How long will it be OK in the freezer for (if at all!)?
Yes it will be fine to freeze. I would put it in a box and then wrap in saran wrap. It will freeze as long as you need it to, I'd say at least 2 weeks before any problems arise.

Will it be OK to wrap the cake in saran wrap with the ruffle design or will it damage it? Should I freeze for an hour for it to get hard then wrap it in saran wrap?
Anything touching the cake is liable to damage it, even frozen. I would put the cake in a box then wrap that.
