I have to deliver a three tier fondant wedding cake to a wedding tent at the end of Aug. I am worried that the cake will 'melt'. Any suggestions? Wedding is at 3 outside the tent and cocktails will be in the tent after that and dinner in the tent at 6. When should I deliver the cake and will it melt or what will happen to it in the heat,, wedding is in Aug.

Buy a block of dry ice and find a box that will easily fit over the cake with plenty of clearance. Break the ice into a few large pieces (use gloves and be careful dry ice will burn your skin) Arrange the dry ice pieces around the base of the cake and then put the box over top of the cake and the ice. This wont be very pretty but it will keep your cake cool for a few hours. Hope this helps icon_smile.gif
