How far in advance can I bake & decorate sugar cookies? I have quite a few for next Sunday, but want to bake them ASAP since they are a bit detailed :/

You can definitely bake them ASAP. I baked NFSC for a wedding many weeks in advance and they tasted fine.

I've baked, decorated, and frozen MANY batches of NFSC. The trick when defrosting is to let them come completely to room temp without touching or disturbing because they will condense as they thaw. So, if you store them in plastic baggies, just be sure they're totally thawed before moving around, or the condensation will ruin your design.
