Iv been asked to make a diabetic victoria sponge...I have no idea where to start, any tips?
maybe you can try substituting the sugar in the recipe with sugar free sub like splenda. also, search the web if you dont have a recipe and see what comes up.
maybe some of our other cake buddies can assist as well
It is not just about the sugar in the cake. The main culprit is carbs, so the flour is also a big concern.
I have made a diabetic carrot cake by changing the flour to a wholegrain, but this will not work if you do a sponge cake.
