Hi everyone, my Mother in law has asked if I can do a 2 tier cake for their wedding anniversary - bottom tier fruit cake, marzipan and royal icing (a bit of a blast from the past but OK) and top tier sponge but still with Royal icing as she prefers this style of icing.

I've never done royal icing on sponge so my questions are:
is it possible?
do I need marzipan?
Would I need a firmer style of sponge?
When it's cut, would the royal icing crush the sponge?

I can't picture it myself but would be grateful for advice from anyone who has done it
Thanks

Hi would of thought its possible I would use Madeira sponge marzipaned and add glycerine to royal icing to soften it so should cut easier without crushing simples!!
hope this helps icon_biggrin.gif
