New To Cake Business. Any Suggestions?

Hi,
I'm new to the cake business, and I need help. I recently got together with a small restaurant and will be making cakes for it. My question is what is the best way to box the cake slices? My idea is to make mini cakes and frost each individually. I know it will take a little more time, but I dint want the cake slices to dry out ( if I made cake and sliced it). I'm thinking I can make cakes ahead of time and freeze them, and frost them as needed. Is this a crazy idea? I need help icon_sad.gif

Or ideas to keep cake slices fresh...

First off, your state may require different licensing to sell wholesale to those who will resell your product.

Secondly, what did the restaurant request? Do they want cake slices or whole cakes that they'll slice? If they want slices, individual slice containers are available.
