Doing my daughter's wedding cake in August. This is a link to the cake she has picked out:

Just wondering what my cake decorating sisters and brothers might suggest how to go about it. Obviously the roses are chocolate candy clay. Think the panels are dried fondant? White chocolate? Candy clay?

Thanks for your help!

It could be either but I would use white chocolate clay.

Thanks! I was leaning that way. Looks more like white chocolate to me anyway.

That is a cake by Baking Arts in San Francisco, and he uses candy clay. He also sells tutorial DVDs that are very detailed on how to do this technique.

This cake uses a combination of both DVD's.
