I bought the 2 inch round set of Alan Silverwood mini pans, but I an at a loss as to how to decorate them. I made some red velvet cakes, and leveled them, sliced them evenly into 3rd's, filled with cream cheese frosting, restacked(doing each one seperately) and tried to ice in cream cheese frosting, and looked like crap! So I used white candy melts an dripped down over the tops, but that didn't come out well either. Any advice???? I would like to be able to make these for personalized favors.
I would start by only using two layers. I think it would make them a lot more manageable. Then, you could make three cakes out of two pans. Also, I would wrap them in cellophane and freeze them for a few hours then take them out and frost them. Freezing them will make them a lot easier to use and if you leave them out for about an hour after you frost them, they will sweat and then you can cover them in fondant, if you would like.
