Hello Cakers!

I need tips on how to accomplish piping lattice work on a 12" square cake. I havent done it before and somewhat intimidated. Also - royal icing versus buttercream.

You should practice piping the lattice on wax paper so your first time isn't on the actual cake. My advice is to go slowly and don't cut corners. As for buttercream or royal icing...I'm not really sure, I've always used buttercream and it works, but I don't know about royal icing. Good luck!

If you're covering the entire 12" square cake with lattice, you might consider piping RI panels to attach to the sides. This would work well if your lattice design is with a flat, wide tip. If you're using a tiny round tip, like #1 - 4, it might be too delicate to attempt.

If you're only piping lattice on small portions of the cake, I'd definitely pipe BC directly on it.
