I am wanting to do a cake with filling between layers. I know you have to put icing down on the layers to keep any filling from running out of the cake. My questions are can you use any filling? I am wanting to do fresh strawberry halves mixed with the strawberry gell and then fresh blueberries mixed with the blueberry gell. Would these fillings work for my 2 layers? And also will it ruin the cake if I fill it and put the fondant over the cake the night before decorating it and serving it? or should I do it all in the same day? Any advice would be appreciated!

You will have to use a good icing dam to keep the filling from leaking out. I don't see how covering in fondant a day ahead would ruin your cake. I've done it up to 3 days in advance with no problem. You might need to refrigerate it, though, with those fillings.
