One of my favorite decorators on Amazing Wedding Cakes is Christopher Gerren. I noticed that they seem to use two pieces of fordant on their cakes. I'm guessing there is already a top piece in place when they then wrap the side and trim it even with the top with a razor. Do any of you use this technique instead of the single large piece of fondant over a cake.
It's common to do that with square cakes to ensure clean lines. Or if you wanted to have the top of the cake a different color than the sides.
