Does anyone know if you can use Dixie's premade icing under fondant? I asked her and she said she has heard people have done it but she hasn't herself. I have a big cake to make and wanted to use the icing and not make my own but want to be sure it will do ok. Anyone used it or know for sure?

I don't see why you couldn't. I've sampled it, it's just a hi-ratio based buttercream.
It's not a crusting buttercream and a little on the soft side so you might want to refrigerate to firm it up a little. I've taken Dixie's classes and worked with her icing and it wouldn't be my choice to use under fondant...JMO
