Hi there,

I moved to VA and I miss the Vanilla Rum Cakes I used to buy in Miami bakeries. I know how to make the Bacardi version. The Vanilla Rum cake is dense and very moist but the rum taste is not as intense as the Bacardi recipe.

They do sale rum exact which you can add into the batter. For rum cakes you sprinkle rum on top of the cake after it is completely cool for a few hours or so, then flip it over and sprinkle or brush the rum on the other side. For a rum fruit cake you soak the fruits for a few week to have a really great cake after that's baked n cool. You do the sprinkling or brushing the rum on the cake and so on. Hope this gave you an idea

For my rum cake I bake a regular vanilla cake, after its been cooled doown but still warm I prepare a "syrup" with equal parts white sugar and water (for a 8" cake pan I use 1 cup of water with 1 cup of sugar) and boil it in a saucer, when it reaches the boiling point I take it off the heat and add 2-8 tablespoons of rum or brandy ( I prefer Bacardi rum). Take the cake and stab it with a thin kabbob stick or any thin long wood or metal, pour the syrop evenly over the cake while its still in the pan, leave it for a minute while the syrop spreads across the cake. Turn it over and pour remaining syrop on the dry looking parts of the cake. Always test with your fingertips the moist-ness fo the cake, you want an even ammount of syrop throughout the cake.

I get my Rum Cake by Ms. Merl at jamaicanblackcake.com. She makes JUMBO size icon_lol.gif rum cupcakes. She resides in Florida and I in NYC, she bakes to order and ships them once cooled. Seriously old school Jamaican Black Cake and Rum cake, this italian girl LOVES! totally recommend you check her out! thumbs_up.gif
