I am trying dk choc ganache for the first time and am wondering if anyone can tell me the best recipe for it and also any tips for how to get a perfectly smooth finish. I do not want it to look like choc icing. I want it to have a polished glossy finish. Thank you!!!
Are you planning on using the pour method or applying with a cake knife? If you want a perfect shiny smooth finish then use the pour method. I use 12 ounces of dark chocolate chips, 2 tablespoons butter, splash of vanilla and depending on the consistency I start with 1 cup of cream. If I am frosting the sides of a cake or cheesecake I use 3/4 cup cream. After the chocolate has melted with the cream I remove from heat and add the butter and vanilla. Hope this helps.
