Cream Cheese Icing Refrigeration Question - Urgent!

Hi all!

Just a quick question about cream cheese icing... From what I gather.. it needs to be refrigerated.... so... My sister is making a carrot cake with cream cheese frosting for a baked goods stall at the Xmas lights "switching on" tomorrow evening. However, the cakes need to be handed into the school tomorrow morning. So... does she need to tell them to refrigerate the cakes or what?

I would refrigerate especially if it's going to a school. I have left cakes out for a couple of days iced in CC icing, but with kids I just wouldn't risk it.

If you go to Earlene Moore's site she has a cr ch b'cream icing recipe that can be left out up to a week. Lots of info on her recipe. Do check it out.

Oh good point Kakeladi-I totally forgot about her recipe. I use the Decorator's Cream Cheese icing on this site with vanilla bean paste and it's awesome!
