Hi all,

I am making a chocoalte panel cake on Friday that the bride is picking up Friday night for her wedding Saturday.

It is a choc mud cake with Betty Crocker ready made frosting and white chocolate panels. The cake is decorated with 15 handmade roses out of chocoalte fondang and modelling paste.

MY question is, should the bride put the cake in the fridge overnight? Will the roses sweat and turn yucky if she does? If she leaves it on the bench, will it be ok food safety wise??

Thank youicon_smile.gif

The cake and frosting you described will be fine on the counter. I'd be concerned about condensation or absorbing odors if it were kept in the fridge.

I'm always very concerned with leaving cakes on the bench.
