No Jelly Roll Pan

Can I use my 12 x 18 x 3 pan instead? I watched Barefoot Contessa (recipe I'm using) and she just turned the pan over and dumped it out on a towel. Why can't I do this with the pan I already have? This is for her Pumpkin Roulade. I don't have time to order a pan and I don't want a brand available locally.

Thanks for the help. I googled it to death and I came up with nothing. Common sense said I could do it, but I wanted to make sure. We don't have quality pans available and I want to make it for my family on Monday.
