I am finding conflicting information on the "shelf" life of marshmallow fondant. How long will it keep if refrigerated? How would I know if it is bad and not usable?

I've been keeping mine in the freezer. Used some recently that had been there for a couple of months. Just let it come to room temperature and then microwaved it for a few seconds and then kneaded it a bit. Texture and taste are still great. I'm guessing that the taste and texture would be your way of determining if the fondant is still okay to use.

I wouldn't keep it over a few months.. Freezer is the best way.. But make sure u wrap it tight and double wrap it

Thanks for the tips. I have some that I made about 2 months ago and have it in the 'fridge. Will try to use it on a cake I am making for a charity bake sale, but will taste first. I just don't want anyone getting sick!
