Cream Cheese Icing Storage.....help!

I keep finding conflicting info on whether or not a cake covered in homemade cream cheese icing needs to be refrigerated. Please help. icon_cry.gif

I have read that it should be b/c of the cream cheese, then also read that the sugar keeps it from spoiling?!?!?

Technically, yes. It shouldn't be left out more than four hours.

However, I and many others have left it out at room temperature for a day or two with no issues.

If you are selling a cake, err on the side of food safety and keep it in the fridge always. Cakes with cream cheese can be left out for several hours. Regardless of the frosting I put all completed cakes in the fridge until they will be transported or take out in enough time to come to room temp before serving.

Sugar as well as salt are a form of food preservation to slow down spoiling. So I am sure that there is tons of info out there about the subject.
