I am looking for a good caramel frosting recipe. I have searched on CC but it goes to nothing available ??

There are several recipes for caramel frosting on CC. Go to recipes and just put in "caramel" and you will get recipes for caramel flavored cakes/cupcakes as well as frostings. Some frostings say salted caramel but I am sure you can eliminate the salt.

However if you are making SMBC or IMBC you can always make a caramel sauce and fold into the buttercream.

I will share one that my aunt kept secret for YEARS! When she died, my mother got her recipe box.

This requires a little work, but is amazing; It tastes like fudge. I pull this recipe out every Christmas when I make my stack pies and jam cake.

1 1/2 Cups brown sugar
1/2 cup white sugar
1 cup half and half

Combine all ingredients. Boil until it reaches soft ball stage-this takes about 25 minutes. Let cool, then beat, beat and beat some more. Beat until it's not shiny.

Argylealice,
Half and half is half milk and half heavy cream. If you don't have it in the UK, you can just use 1/2 cup of cream and 1/2 cup of milk. I do that sometimes in a pinch.

Thanks for sharing! Would be really interested in trying this! Do you happen to know what temp the soft ball stage is?

Soft ball is 234oF and slightly above; 244oF is hard ball stage.
