Do most of you prefer a light and fluffy cake, or a moist, dense cake? What do your customers prefer? I like a dense cake with a heavy crumb, but it seems most people prefer a lighter cake.

Just curious...........

As with you, I prefer a moist, dense cake. However, most people do prefer a lighter cake. I contribute that to the consumption of boxed cake mixes.

I adjust the density to the style of cake. I offer heavy, moist cakes and one that is almost weight-free, and everything in between. I work with what is right for the flavor and the filling/frosting.

I prefer dense cakes...texture is a big factor for me in whether or not I like a food though. I like things with a lot of substance so light and airy doesn't usually do it for me. Same with fillings--I don't like the mousses or light creams but I live the caramels and fudge fillings.
