So I made these delicious Stout beer, malted milk ball cupcakes and I can't figure out why the tops keep coming off when I unwrap them. I made the cake part with Cacao Barry dutch process cocoa powder which was mixed with boiling water and the beer which was boiled as well. The cake was moist and had a nice crumb to it so it would have been great if the tops didn't separate. The frosting was fairly heavy because it has malted milk powder, cocoa powder and the confec. sugar. Any idea why this would happen????
I'd like to know as well because I've had that problem only with my chocolate cupcakes off and on. the top comes right off when I am taking cupcakes from pan. Any food scientists out there? I'm sure it has to do with the ratio of some ingredients.
