How the heck do I go about sprinkling the chopped pecans? I have a tilted rotating cake stand but my Italian Cream cakes are heavy and when I tilt the stand I worry it will fall off plus it's not a uniform sprinkle. Any ideas would help.

I would put some of the pecans in the cup of my hand and lightly place them on the side. HTH I do coconut this way as long as the icing has not crusted completely it works fine.

Same as Momo. I hold the cake in one hand and press them in with the other. It's easy once you try it, even on the heavy cakes. If it is too big, just cup your hand and press as best as you can. You may have to go over it twice.

Put a baking pan under the cake to catch the nuts, then if they don't stick you can just scoop them up again.
