I've used this recipe twice now, and each time I've hated the result. Maybe I'm doing something wrong? I found it here:
The first time I made it, it seemed like it separated or 'curdled' even after whipping longer. I froze the remainder I didn't use, and it seemed to behave a little better after thawing and rewhipping. So, I made another batch tonight, and it's just not staying together. It keeps wanting to separate.
The only change I made to the recipe was to double it and use 50% butter and 50% shortening (which I think the poster of the recipe says she did also).
This time, not only does it seem to want to separate again, but now it even tastes a little sour! WTH!?
Any ideas??? I was going to tort/fill tonight, but I decided to refrigerate and try in the morning.
