Here is the recipe

2 ½ CUPS AP FLOUR
3 LARGE EGGS
2 SUGAR
1 CUP VEGETABLE OIL
1 CUP SOUR CREAM
2 TEASPOON VANILLA EXTRACT
1 TEASPOON BAKING POWDER
½ TEASPOON BAKING SODA
½ TEASPOON SALT
I beat eggs and sugar, then add oil, sour cream and then dry ingredients

The problem is that the cupcakes have been coming out of the oven very brown almost burnt on top. Whenever I reduce the time, the crust is perfect but the inside is not done, still moist.

I use a commercial convection oven and bake at 300. I have tried increasing the temp and reducing the time. I have tried reducing the temp and increasing the time, the results still the same.

When I make these at home they are not as brown on top, but they still have that chewy top layer that tastes like a sugar cookie on top of the cup cake. I believe I have to tweak the recipe b/c I have to bake out of the commercial kitchen.
