does ganache have to be refrigerated all the time or after I make it can it be at room temp. I am making a cake for next friday and was wondering if I would be able to make it wed or thursday, fill the cake thursday and it still be okay?
It can be left out for two or three days. Any leftover cake, I would refrigerate.
I have always refrigerated cakes covered or filled with ganache.
I don't normally refrigerate a ganached cake unless it's very hot.
