I make a great sugar free cheese cake (many members of my family ares diabetic) every one raves about it but it can be pretty boring. I am just getting into cake decorating and I'm really enjoying it but don't have alot of use for sweet cakes. So and I'd like to decorate the cheese cake for special occasions, has anyone covered a cheese cake with fondant. I figure it would be easy enough for the diabetics to peel the fondant off.
I haven't done it, but I can't conceive of why you couldn't.
You could also use stabilized whipped cream sweetened with Truvia or Splenda or some such thing, ice and pipe designs with that.
